   PREFACE   
本公司為了讓真空食品加工技術更普及化,藉此造福人群,乃積極研究而突破傳統設備造型,開發設計出較多功能、經濟實惠、輕便靈巧之機種,鄭重推薦給從事食品研究的專家和速食餐飲業的業者,期望能達到學術和實用雙重效果。

雖然許多消費者怕吃太多的油炸食品而導致增胖,然而油炸食品仍然是日常生活中不可或缺的產品,其所以被詬病的理由不外乎下列三點﹕一、含油量高導致增胖。二、食油的容易氧化導致酸敗。三、炸焦物質衍生致癌物質。真空油炸可針對上述缺點立即改善,因為在真空無氧狀態中,其沸點可降低至 60~70°C,也就是在此溫度即可油炸,有別於一般傳統油炸之180°C,所以產生無燒焦、油脂不易氧化而且油脂難滲透至內部之低含油量〃看似無油〃產品。

在美食文化的世界堙A以真空油炸取代傳統油炸,讓消費者享受美食的同時亦能吃的安心,乃是本公司致力推展真空加工技術的願望。希望能藉此拋磚引玉而喚起社會大眾重視健康食品的重要性而共同努力改善傳統油炸食品諸問題。

In order to promotethe technology of vacuum food processing, we develop new type of processing equipment which is quite superior to the existing ones in the structure. It's specially recommended for both R&D experts and fast food owners touse.

Though the consumers don't like to eat much of fried food for the reason of heath, the fired food is still popular and important in the gourmet culture.

The problems behind enjoying the excelent taste of fried food are high-oil-content, cancer factor from over-fried and oil rancidization. The vacuum frying can overcome these problems by the processing in vacuum and non-oxygen condition. Because the boiling point in the vacuum condition is only 60 ~ 70 ° C that is lower that that, 180° C, in normal condition. It can produce the low-oil-content, non-overfired item to solve the porblems from traditional fried food.
